Carenna KT Taking a Break from Queen's University, Belfast, North Ireland

Carenna Katague Thompson, my youngest grand daughter send me the following photos from her school break a couple of weeks ago. The photos were taken in Vienna, Austria and Budapest, Hungary.  She has a break from her college studies in Queen's University, Belfast, Northern Ireland.  She has a scholarship to study abroad as part of her Master's Degree program in International Studies at Georgetown University, Washington, DC.

A Sunday Escapade from My Gilded Cage Here at THD

Yesterday, daughter Dinah, grand daughter Alix and her new hubby Brendan Quinn and I had a festive and happy Sunday afternoon, with a dumpling lunch 💥( in the Bishop Ranch Shopping Mall) in San Ramon. Our lunch was super delicious and even my first time to taste vegetable dishes in a Dimsum Restaurant. The afternoon was followed  by 3 hours of Philippine mahjong in Dinah's place in Dublin. It is an afternoon I will always remember in my aging years. 


Playing Philippine mahjong using 16 tiles and 3 jokers is more exciting and challenging than the standard 13 tiles-no joker Hong Kong style game we play here at THD.   It have been a while I had a winning 7 pair hand with out a joker ( see photo below).

My last hand was also a 7-pair with 2 jokers but lost to a hand without a joker. This is good illustration that mahjong game is 99% luck once you mastered the basic of the game.

A Most Special Musical Treat Saturday NIGHT Here at THD

I woke up this morning still humming " I could have Dance All Night"- one of the Broadway songs sang by Uma Dobia at last night special Performance here at THD. The Lobby was filled to capacity ( standing room only) and was full 15 minutes before the performance. It was an evening that I will always remember. The repertoire was perfect-opera excerpts from my favorite operas sprinkled with a couple of broadway musical pieces and one comical piece. I sat at the back, but Uma's coloratura soprano voice filled the Lobby with musical splendor that have touched my heart and I believed all of the residents here at THD. Thank you Uma and of course to your DAD, Dean -one of my buddies here and a loyal reader and commentator of by blogs. Who is Uma Dobia?

She is the daughter of Dean Elias( our fellow resident here at THD). She is a professional singer living in Melbourne, Australia. She sings classical, musical theater, jazz and soul music. She graduated last year with a Master of Music Performance ( Opera) from the University of Melbourne. She is currently a resident emerging artist with the Australian Contemporary Opera Company. 

Uma's performance reminded me of the many broadway musical presentations I have experienced in my younger years.

I am not an opera enthusiast ( I have just attended two live opera presentations in my life), but last Saturday performance of Uma's reminded me that opera music can be enjoyed not only by the musical-elite but by the common person not musically-trained but musically-inclined individual like me. Filipino Food is Lazy and Crazy-Michael's Barong Filipino

The end of Filipino-American History Month Celebration here at THD will be in 2 days.  Michael( see photo above) at the Concierge Staff informed me he has been to the Philippines and has a Barong. I told him to wear it before the end of the month so we can have a photo shoot. Today is the day. Here are the photos of Michael with his Filipino Barong and me with my Guayabera Mexican Shirt. This is my last posting celebrating Filipino-American History Month here at THD.

While looking up my previous articles on Filipino food, I found the following "non-serious take" on Filipino food, that only Filipinos will understand and enjoy. So my apology to my numerous non-filipino readers if this article does not ring a bell or tickle your funny bone. Anyway, you will learn a few names of Pinoy comfort dishes very popular to the Filipinos all over the world.

Filipino food is not Chinese food. If it is, our Adobo (marinated meat) would be steamed chicken with soy sauce. It is neither Spanish food. If it is, we wouldn’t be eating rice like breathing air. Filipino food is not American food either. If it is, Jollibee would have bigger servings. True? If you don’t agree with me, next time you’re in NY try convincing the hotdog vendor that his dogs are not American hotdogs… in fact it is German because that’s where all the sausages come from. Then brace yourself.

Filipino food is filipino food. Adobo was just named "adobo" by the Spaniards because they can’t name the beast. Kinilaw (raw fish in vinegar and spices) has been with us for thousands of years that when the Japanese witnessed it wiggling on our native bamboo table they attacked Pearl Harbor just to get to us… a pretty smart move I tell you. And Sinigang (fish soup) is definitely a Filipino original because if you ask from what region this fish soup originated, you are definitely promoting a royal rumble, you should have brought a ring with you.

But then what is Filipino food really? I’ll give two points in the meantime.

Firstly, it is food for the crazy.

You can’t just eat the salty-sour Dinuguan (blood and guts stew) by itself, you have to eat it with the majestic – Puto (rice cake). There you go, you became beauty and the beast at the same time. You can’t just cook Kare-Kare (tripes and ox tail in peanut sauce) with enough salt to taste, you have to cook it bland and then eat it with the salty Bagoong (shrimp paste) as a condiment. You crazy, woman?

Secondly, it is food for the lazy.

Filipino food is made for Juan Tamad (Lazy)… and has a tendency to just put in any ingredient that is conveniently available. Would you believe me? No? I’ll prove my point. Adobo is a dish where you don’t do any cooking at all. You just throw them all together in a pot, put it on the fire, wait for the fruit to fall on the ground and- Voila! It’s cooked! Did you do any cooking? No. Except for putting vinegar in before the whole blob dries up. Ladies and Gents, Juan Tamad can now eat Adobo. If you are telling yourself that it is just me exaggerating, stop right now thank you very much, here’s another dish. Bulalo (beef shanks and marrow soup) is a dumper’s food like Adobo. Dump all the meat and bones in the pot and after 3 hours, dump the rest of the vegetables, cook for a little bit and Bob’s your uncle. You dumpster.

Crazy and Lazy could have been your cat and dog’s names but when it comes to cooking, those words mean cutting edge while painless. It’s crazy because it’s bursting with flavors. It’s lazy because it is chill out food. That’s me saying I want to live.

Anthony Bourdain on his recent trip to the Philippines was asking the question, ‘What is Filipino food?’ again and again and I felt so bad that no one can describe to him what we are eating! Somehow in the end, it turned out that we have a food identity crisis. And I wouldn’t even start talking about the Filipino identity. I’ll die of hunger before I can stop talking and start shoving food in my mouth. Don’t you just hate it when you’re supposed to eat and you can’t stop talking?

I’ll stop talking now. Let’s get to work and make adobo. *wink wink*.

And Now here's a more serious description of Filipino Food and Cuisine.

Filipino cuisine has developed from the different cultures that shaped its history; it is like other Southeast Asian cuisines but with heavy Spanish influence. Some ingredients of the Mexican cuisine, such as corn, tomato and chili, have also found their way to the Philippines.

Though its cuisine is not as renowned as many of its neighbours, such as that of Thailand and Vietnam, Filipino cooking is nonetheless distinct in that it is possibly the least spicy of all South East Asian cuisines.

Don't make the mistake of thinking that Filipino food is bland, though. It is just that instead of spices, Filipino food depends more on garlic, onions and ginger to add flavor to the dishes. Painstaking preparation and prolonged cooking time is also a characteristic of most Filipino dishes, and when done properly is often what brings out the flavor of the food, as opposed to a healthy dose of spices.

With over 7,500 islands, the cuisine of the Philippines is rather a mish-mash of hundreds of localregional, and ethnic cuisines, and without any qualifiers, you would often think of ubiquitous dishes such as adobosiniganglechon,and Filipino-Chinese dishes.

Filipinos prepare great-tasting food, especially on special occasions with visitors around. Filipino cuisine is a mesh between Chinese, Mexican, Malay, Spanish, Indian, and American cooking.

It usually consists of six meals per day, including breakfast, snacks, lunch, brunch, dinner, and a final reach toward snacks to end the day on a full stomach. Most Filipino dishes involve rice, which is served alongside other edibles.

Most Filipinos regularly use spoons, forks, and knives to eat their food. But, sometimes hands come into play when seafood is involved.

Some of their most popular dishes include:

  • Chorizo, 
  • Lumpia, 
  • Paksiw (pork or fish in vinegar and other spices),
  • Kare-kare (a stew made of ox-tail),
  • Sinigang (soup delicacy made of pork, prawns, or fish), and
  • Longanisa (sweet sausage).

On the other hand, some popular snacks are bibingka (rice cake made with margarine or butter), polvoron (powder candy), puto (rice cakes), and chocolate.

Understanding Filipino Traits and Values-Call Center Capital of the World

Do You know that the Philippines is known as the Call Center Capital of the World? I know because if I call for help for my Comcast Services, a familiar voice at the other end of the line most of the time is a familiar Filipina voice in perfect English but still a recognizable Filipino accent and lilt. Sometimes I get and answer from India or Croatia. But 90% of the time my ask for help is answered from the Call Center located in the Philippines.

The Philippines, billed as the “Call Center Capital of the World,” is a consistent top outsourcing destination for one good reason: the Filipino people. Aside from their wide range of skills and a sense of readiness to serve a global audience, unique Filipino values make them built exactly for the outsourcing industry.

What is a Filipino?

People would often wonder, albeit silently, whether Filipinos are Pacific Islanders, East Asians, Malays, or Hispanics. Even before the Philippines was called by its modern name, native inhabitants of these islands came from different races. The result was a diverse group of people with Malay, Chinese, Hindu, Arab, and Polynesian roots. Then, the Spanish came, and ruled for over 300 years, throwing in a mix of their genes and culture, before the Americans and the Japanese came.

You might be wondering why this is important in the discussion of Filipino values. And the answer is that all the modern Filipino values, as we know them today, came from the Philippines’ long history of mixing various cultures. What the Filipinos are today is a product of a collective experience that stretches beyond time. And this is what makes them perfect for the outsourcing industry.

Philippines Voted Anew as the World's Best Tourist Destination

MANILA – The Philippines was voted anew as the "world's best country tourism destination" in the 2022 Uzakrota Global Travel Awards, cementing its position as a top-of-the-mind travel spot even during a pandemic.

The country bested all other countries nominated with 721 votes, bagging the award for the second time since it held the title in 2020.

The initiative was led by the Turkish travel organization Uzakrota Global, which also recognized Malaysia and the Dominican Republic as the world's top two and three, with 523 and 459 votes, respectively.

Aside from the Uzakrota awards, the country also picked up 13 recognitions in all categories available at Scuba Diving's 2023 Readers' Choice Awards by US-based Scuba Diving Magazine, including the top honors for Shore Diving.

"As the international accolades for the Philippines continues to grow, so too the role of tourism as an engine of the Philippines' economic growth under the administration of President Ferdinand Marcos Jr., whose prioritization of tourism has brought much optimism and hope for the industry," Tourism Secretary Christina Frasco said Thursday.

"These awards reflect the global traveling public's vote of confidence and enthusiasm for our country and it translates to more tourists visiting our shores as evidenced by our over two million arrivals thus far."

The country ranked second in Macro Life, Cavern/Cave & Grotto Diving, Beginners, Photography, and Best Value categories; third in Wreck Diving, Snorkeling, and Health of Marine Environment; fourth in Wall Diving and Advanced; fifth in Best Overall; and ninth in the Big Animals grouping for the Pacific and Indian Ocean cluster.

The country was also previously named the World's Leading Dive Destination 2022 by the World Travel Awards.

Meanwhile, Cebu had been listed among the 50 "best places to travel in 2023" by the US-based online travel guide Travel Lemming.

Travel Lemming described Cebu as "perfect for all types of tourists" and "allows you to indulge in both thrilling experiences and waterfront relaxation."

Another key tourism destination in the Philippines, Palawan, was cited by another US-based travel guide Fodor as one of the 40 destinations on its Go List for 2023.

Fodor called Palawan "the very definition of eco-luxury" and "one of the Philippines’ most magical islands where underwater worlds meet lush jungles."

Aside from the world-renowned Palawan, Cebu, and Boracay, the Philippines has a lot more destinations to offer for various types of travelers.

Samar, Biliran, and Leyte alone are home to plenty of mesmerizing waterfalls, caves, and rock formations, making them ideal stops for adventure-seeking tourists.

Siquijor in Central Visayas, meanwhile, is perfect for those seeking a laidback vibe and a less crowded island destination.

BI: Tourist arrivals top 600K in October

Meanwhile, the Bureau of Immigration (BI) said it sees an increase in the number of tourist arrivals in the country for the holiday season.

This came as the country saw more than 600,000 tourists arrivals in October alone, according to BI spokesperson Dana Sandoval.

“There were 634,000 arrivals for the month of October. So we see that it will increase this November and December. Until January which we consider as the peak season for travelers. In the past few months, we can see that it is increasing," she said in a Laging Handa briefing Thursday.

Sandoval attributed this to the relaxation of travel restrictions due to the country's improved coronavirus situation.

However, she said they logged less than 200,000 tourist arrivals in December last year.

“In December 2021, only over 195,000 total arrivals for the entire month, which is lower compared to pre-pandemic figures,” the BI official added.
